Our Au Poivre sauce is made from peppercorn in house by our chefs and has an elegant aromatic appeal. Our chefs prepare this sauce by combining beef, Spanish onions, red onions, black and green peppercorns, brandy, thyme, heavy cream, veal stock and salt into a large rondeau pot. This mixture is cooked over medium heat and once nappe consistency is achieved (this means the sauce would be able to evenly coat the food – not too thick or thin,) the sauce is then strained and chilled.
This sauce pairs phenomenally with some of our infamous tenderloin steaks. Our suggestion would be to pair it with a succulent cut of steak. A buttery, melt-in-your-mouth Filet Mignon, fork-tender T-Bone or a Porterhouse steak powerhouse would be our ideal picks for the most tender, flavorful and unparalleled experience.
