Few things exude as much fall flavor as a delightfully golden-brown slice of sweet pie. Pies are a Thanksgiving standard and one we’d never want to live without. Here in New York, the local farm stands are buzzing as a chill fills the air. Cars line up down the wide-open road, waiting to purchase the perfect pie. We’d be lying if we said we weren’t those people too. It would be unfortunate to deny yourself the simpler pleasure of indulging in a fabulous slice of fall pie. There are so many to choose from and they’re all equally irresistible! But what makes a good pie great? Here are a couple of our “must have” features of a pie that’s worth the extra calories!

Pie is only as good as the warm blanket of crust it’s wrapped in. It can truly make or break a pie. If the crust is too flimsy it will not hold the filling properly and be an impossible mushy mess to slice! Pie falling apart before it gets to the plate? Not ideal. Our perfect pie has a firm but flaky crust with an unmistakably spice driven flavor. Bonus style points if the pie has a gorgeous lattice on the top! That takes patience, dedication and a love for the art of baking to achieve!

When we think of pie filling our minds naturally jump straight to Apple pie. The perfect consistency and unrivaled flavor. On our must haves list, this filling has to be perfectly cooked.
