Spinach and Roasted Pepper Veggie Wraps

Wrap up your other dinner plans. These veggie wraps are a delight and an easy alternative for dinner any night of the week.

Spinach and Roasted Pepper Veggie Wraps

Sweet, crispy and creamy, wrapped in a soft tortilla. Feel free to substitute your favorite veggies!

  • 2 red peppers (sliced)
  • 1 avocado (sliced)
  • 1/2 cup cucumbers (sliced thin)
  • 1/4 cup hummus
  • salt and pepper (to taste)
  • 1/4 tsp garlic powder
  • 1 tbsp avocado oil
  • 4 tortillas
  1. Preheat oven to 400F. Drizzle red peppers with avocado oil and season with sprinkle of sea salt, black pepper, and garlic powder. Roast for 20 minutes. 

  2. Spread 1 to 2 Tablespoons of hummus on the tortilla, then sprinkle spinach leaves, thinly sliced cucumbers, avocados, and roasted red peppers. Wrap and enjoy!
