Spinach and Roasted Pepper Veggie Wraps

Sweet, crispy and creamy, wrapped in a soft tortilla. Feel free to substitute your favorite veggies!
- 2 red peppers (sliced)
- 1 avocado (sliced)
- 1/2 cup cucumbers (sliced thin)
- 1/4 cup hummus
- salt and pepper (to taste)
- 1/4 tsp garlic powder
- 1 tbsp avocado oil
- 4 tortillas
Preheat oven to 400F. Drizzle red peppers with avocado oil and season with sprinkle of sea salt, black pepper, and garlic powder. Roast for 20 minutes.
Spread 1 to 2 Tablespoons of hummus on the tortilla, then sprinkle spinach leaves, thinly sliced cucumbers, avocados, and roasted red peppers. Wrap and enjoy!
